My mom lives pretty independently just across the street from us. She is getting older and I’m concerned that she doesn’t eat right. So I started insisting that we all eat together at least twice a week and preferably more often. Tonight we made grilled chicken, a steamed vegetable medley, steamed asparagus with goat cheese, and a baked potato. We ate it under the gazebo at mom’s house where we could watch the river sliding slowly past and the sunset painting the sky to the west. The sum of the many parts of this meal was far greater than the cost of the food. A good meal with my family in a beautiful setting on a lovely evening.
Last October, my hospital was bought out by a new healthcare system. Today, is the official name. In celebration of the event, there's free food and gifts.

One of those griddles of mine warped after wiping it with wet rags so now I just let it cool then lay a wet rag on it for awhile to soften the debris so it's ez to wipe off. Can't go wrong with grilled onions. I could eat a whole onion with nothing else if grilled or caramelized.
I ate and actually liked a ConAgra special, the Hungry Man Beer-Battered Chicken dinner, baked in an oven instead of nuked. With the classic not very good mashed potatoes (tasted just like old flaked stuff) and decent mixed veggies and brownie. The chicken was surprisingly good, though. I would buy it again.Home Chef "Sunday Braised Beef" last night was better, which it should be for the price difference.
Now that I got desert out of the way, I am having two Hot Dogs.
One of my co-workers is an amazing cook. He’s just a local good ol’ boy who happens to have an incredible palette. Yesterday he made Tom Yum, Thai lemon grass soup, and man was it good! He and his wife ran a restaurant in Manila for several years and his Phillipino food is also incredibly good. He says I’m the only one at work that even recognizes half of what he makes. All I know is he is always dropping really good food on me!
