X I remember you loving oxtail. I cooked some today and it tasted great but was one third meat n two thirds fat. Is that common? Was my first one ever eaten. Tastes like fatty brisket. Bone nibbling goodness.

The thicker portion that's closer to the base tends to have a thick layer of fat around the outside. If anything, it should be 1/3 fat and 2/3 meat.
How did you cook this up?

X I cooked it in a beef base with bouillon, Wooster sauce, butter and Uncle Chris's steak seasoning for 3hrs at 375 in the oven. It wasn't fall off the bone but it was tender and very yummy.

Had this Arby's brisket sammich today with their spicy sauce and it was good! Will try their pulled pork sammich next time.

We’re cleaning out our chest freezer in preparation for moving it (part of the renovations). I found a quart bag of 24 count shrimp that was only about a month old, a bag of Salmon steaks that mom mail orders from Alaska, and several individually vacuum wrapped Tilapia fillets. I froze the shrimp in water and they were still very good. I blackened the Salmon and the Tilapia but I grilled the shrimp for the memsahib. The Salmon came out all right and I ate it myself. I made a shrimp po’ boy for the wife and wrapped the Tilapia up for my lunch tomorrow.

Enjoyed eggs sunny side up n runny, hash browns, bacon and pancakes for breakfast. Deep fried up some shrimp myself today for a late lunch. Probably will skip dinner and just enjoy a small dessert.

Apple cinnamon pancakes with fresh grated apples on top.

Betty Lou has BBQ ribs slow cooking in the crock and will do garlic butter mashed taters n green beans. She likes cooking her own MD meals. It's only been a couple times she let me take her out to holiday dinners. I prefer her cooking as well.

For lunch I made another shrimp Po' boy for the memsahib and a blackened Tilapia Po' boy for me! That's the last of the frozen shrimp and Tilapia so I guess I'll have to re-stock. Around here that means get out the cast net!

We had one of our favorite healthy and simple breakfasts of boiled eggs, olive oil and smoked salmon. I'd rather have a carb heavy breakfast like a big stack of pancakes drenched with syrup and butter. I gotta try to eat healthy more often.

Bill some dogs eat better food than people do.

Cooking up a brisket for my mother to enjoy. Is almost done and the house smells great because of it. She liked the apple pie I brought her earlier.
