This unknown maker, cheap, butterfly knife is always right next to my computer mouse.   When I need a moment to ponder what I'm typing, I practice a few knife spinning/flipping moves.   It's better than a fidget spinner or worry beads.  After many years of this, I hardly ever slip and cut myself anymore.

Excellent!  I have a practice one.  It’s floating around the house somewhere.  It may even be in a case with the rest of the knives?  I hope to get a nice sharp one one day.  Thanks for showing it off!🔪

This is actually my newest one.   I practiced so much on my first one, I wore it out and it fell apart.  Obviously I had too much time on my hands.

Thank you, yes, they are mine along with a "few" more. I got interested in lambsfoot blades traditional slip joint knives a few years ago and since then one of them has been in my pocket every day. I have several modern knives as well but the lambsfoot is very handy in all small chores..

FWIW I just bought this system and really like it. My chefs knife has stayed sharper longer between needing to see the steel. Apparently amazon links don't show anymore...

Hmmm. I’ll have to check mine tomorrow when I get home.  I’ll do a whole resharpen on it.  It’s a thin blade.  Wondering if the grind angle changed just enough to “mess it up”? I guess just keep working at it.  Some steels don’t take a real fine edge.  Some are better without a polished or honed edge like D2, more of a toothy edge.

Yeah, it was quite a chunk of cash but I have complete control on angles and just how sharp I get my knives. About two years ago my wife was rushing and snatched a hand towel from the kitchen counter. I was there cooking and using my knives... the towel caught on the tip of my knife. The said knife went spinning across the counter and fell catching the tip of her big toe. It went thru the nail and cleanly sliced a bit of her toe. My knives are scary sharp, the ones I sharpen for my wife and her mom (and my mom before she passed) I only take to 1000 grit. I get away with sharpening their knives on the Ken Onion sharpener but then again, their knives are good quality but not nearly as expensive as mine. I sharpen theirs at 17 - 20 degrees nominal (34 - 40 inclusive) for the most part while my Japanese knives are 10 degrees nominal and my Wusthof knives are 12 degrees nominal (24 degrees inclusive). They all flat out refuse to touch my knives, not even to wash them!

That is a good sharpening job I just got mine and started out at 20° then wasn't happy with it and dropped it to 17°. I am much happier with it now I am sure if I take the time I could get similar results with my setup but I don't have super high quality knives. The one I am using is a pioneer woman set I got from walmart. I'm not big into knives they are a tool and need to function at the base level for me to be satisfied.

Totally understandable, a knife is a knife and that's about it. I overspent on my kitchen knives, especially the Japanese hand forged ones but that was before I got into air guns Even the Wusthof knives are on the expensive side but they stay sharp for a long time. I usually do three or four passes on a ceramic rod before I start cooking/cutting and wash and dry them when I'm done. I think the last time I sharpened my knives was more than a year ago and I use them almost daily. The Japanese ones are super sharp but at the same time they require more care, they have to be oiled (Tsubaki oil) after each use.

I do it more out of habit than need. I have a good (Wusthof) steel also, I think I used it two or three times last year. I was like you before I bit the bullet and $pent the money on the knives I use now but to me it was worth the price,  makes the cooking part more enjoyable. That is not to say that you have to buy the super expensive knives, it's very much like air guns.  They all do the same thing but some are more fun than others.

You guys crack me up!

I use sandpaper glued to a stick and leather glued to a stick to sharpen.  That is what I use 90% of the time to keep the edge touched up for use.  Actual sharpening (removing steel) doesn’t have to be done very often , it really depends on how much use/abuse the blade gets and the steel of the blade (think durability/hardness).  I have over 100 pocket/camp knives.  Nothing high end but some of its on the nicer side and some custom pieces made for EDC.  I also have wet stones, oil stones and a polishing wheel on a grinder.  My son has one of the WorkSharp precision sharpening things.  That works good for a quick sharpening. 

I have always had a fascination with knives since being a kid.  Fortunately I never could justify some the the very high prices that custom knives are getting.  I would love to own and use many of them but a knife is a tool, like Matt said, and I can get what I need done with a $200 blade vs a $800 blade just the same.  I don’t get the bragging rights with the $200 knife is all 😱🤣😜
