HW 80 .177 break in noise and pellet weight

Thanks to everyone who responded to my first post about loose screws.
Thought I'd start this topic as I was getting off topic.
I have an acre of property. Fenced in. No problems shooting my HW 75.
As I was breaking in my HW 80 .177 with 7.33 grain pellets all of a sudden it seemed that the rifle sound became much louder. Maybe the wind changed or I'm just old?
So after a proper break in with 10.65 grain pellets will the rifle quiet down any? (I will install a quiet backstop so that's not a problem)
And lastly I chose 4 pellets to test. Two are over 10 grains in weight. For shooting targets what is the heaviest I can go?
Thanks very much

The 7.33 grain pellets are to light, breaking the sound barrier.

Thanks, I'll add that to my test. I'll stay away from anything lighter.
