Hey Pard... nice hog... I got one from the back yard last week. It was about that size, so I soaked it in a good brine before I butcher it. Then I spent the next day making sausage. I use plenty of bacon ends when I make my sausage, of course you need the fat, but it sure adds flavor to the sausage.  I'm heading to Colorado in Oct for some hunting, but doubt I'll get down your way.
