I have the older wood 397 with a Williams peep, and it seriously accurate on JSB Diablo's, at the time (2013) I think the box states 800 FPS. Is this newer synthetic stock version much of an upgrade? I see it's spec'd at a higher FPS than the old one.

The higher FPS advertised is with non-lead lightweight pellets.

There is no discernable differences between the 397 and 397S that I'm aware of other than the stocks. The synthetic stock has a higher comb making it pretty much a necessity to install a scope. If you’re considering scoping your 397 the Baker Airguns 39x scope mount is one of the better options for this.

I have the Baker mount on my 392 (wood stock) with a Hawke Vantage 4x32 scope that came with another gun I had bought used. Like you I have the Williams peep sight on my 397.
If you’re considering a new pumper you might check out the new Crosman 362
https://www.crosman.com/storage/catalog_files/VOC21-Crosman.pdf.
It’s basically a full-size rifle version of a 1322. More potential for upgrading than with the 39x rifles. I'd buy a 362 before buying another 392/7 personally.
Here's a thread about
