Yesterday, I brought some Doves to the Fire Station where I work. I removed the breast meat from the bone and seasoned the meat with some Tony Cachere's Original Creole Seasoning. Then I layed the breast halves on a strip of bacon, along with a small glob of cream cheese and a slice of jalapeno pepper. I wrapped the bacon around it all and stuck six or seven of them on a skewer. I took what was left of the cream cheese and mixed some bacon bits up in it and put this mixture into some fresh jalapenos that were split in two and had the seeds removed from. All this stuff was cooked on the BBQ pit. When the peppers were done, a mixture of shreaded cheddar and pepperjack cheese was sprinkled over them. The birds were done when the bacon looked done enough to eat. DONT over cook. We also had a nice mess of catfish and bass that one of the men baked in a nice mixture of olive oil and butter and seasoning. Feeding time was fine.
All of the Doves were killed by me, with my air rifles.

I am all for olive oil though! Thanks for posting this and great pics! I had almost forgotten what good eating is about

I don't know how I missed this post but all I can say is gracious does that look absolutely scrumptious. Sure wish it was legal for me to shoot doves.

Thats some fine eating,we do pretty much the same here without some many process's.
Chipolte and jerky or bacon chopped fine in the cream cheese(stand overnight)
Cheese mix goes in the seeded whole Jalapeño peppers,then wrap with bacon
Stuffed peppers go inside whole skinned dove,quail or pigeon
Birds are wrapped good with bacon and slow smoked for about 15-20min or two beers which ever comes first,
gas grills just require low heat for 15-20min.then move closer to higher heat(same for smoker/wood fire) and start on the peppers.
Pull the peppers from the bird and crisp the bacon,also ensure bacon on the birds is crispy all over during final
cook time(overall 35-45 min)

Next step ain't hard to figure,allowing for extra elbow room should be considered.
