So I started shooting my new AA S500 HFT and over the chrony its a 11.2-11.5 FPE AG. I am not interested in changing its power but for all of you who shoot in this power range I was curious of pellet usage?
Right now the JSB 10.34 leave the barrel at a consistent 701 FPS. Accuracy so far is one hole at 25 yards on a rest. As I said in another thread, this thing is insane.
But I started thinking and looking at Chairgun its clear the 10 grain drop a bit out at 55 yards. A little more than 8.4 grains. Then I started thinking about wind and what would be better?
You guys/ gals experience would be appreciated in this area.

Keep in mind my experience is from my high-power days - as you know, I'm a raw newbie at FT and air guns.
IMHO, drop at 55 yards isn't the big issue. You can reliably predict that. The wind, on the other hand, is a mofo.

I have an MPR which is almost the same gun but with some upgrades. I shoot jsb 8.4s at 795. I'm regulated so I don't get a curve.
At that power level I would shoot the lighter pellets. It will give a flatter tragectory. Also I would recommend getting some scope ring risers. This will help flatten out the farther distances. At 55 yards I only have 25 clicks.
I was shooting some this weekend with no wind and I was able to stack the groups at 53 yards

I can't remember the height on my scope but it is close to 2.75 to 3 inches.

Is it not better from 0-50 to have your scope mounted lower to take advantage of the flatter curve at that range, higher scope height for longer range?

Yes. You increase height to move the flat part of the curve toward the long range.
