Do Crawfish qualify as "Wild Game"?

Most people purge the Crawfish in fresh water prior to boiling. We rinsed ours and then put a second purge on them.
Place salt in the boiling water (about the same amount you would use for spaghetti.) The other seasonings you choose to use are up to you. We used "Tony Chachere's (

) after the Crawfish were boiled because that is how we like it. We included a stick of butter, small red potatoes, onions, lemons, and mushrooms. Some people also include carrots, celery, and garlic.
When the water is at a rolling boil, pour the Crawfish in. After the water comes back to a rolling boil, cook for five minutes and then turn the heat OFF. Let the pot stand covered for 25 minutes before removing the crawfish. We placed the cooked Crawfish in an old ice chest so they would stay hot. They are served up onto individual trays (

) where the individual then applied his/her seasoning. e.g.: My Judy likes nothing on hers. Some also like to prepare a spicy dipping sauce - but that is another story.
The only thing left to do is ENJOY!
Disclaimer: This is our way of preparing Crawfish. There are many, MANY other ways. Tweak it until you are satisfied.

I'm in landlocked Utah, however there is a lake about 1.5 hours away from me that is known for it's large numbers of crayfish. My brother and I go up there at least once a summer and catch pounds and pounds of crayfish, then we host a neighborhood boil.

Christopher, down here, Crawfishing is an occupation. On rice farms, usually the crop of rice is rotated annually with Crawfish. So it is easy to purchase a sack (about 40 pounds) from a farmer. Most families have a Crawfish Rig for family boils.
Rig = Propane bottle, burner, pot, and a basket for the inside of the pot.
The pot I have dates back to 1944. I fabricated the burner in the early 70s. We purchased the inside basket just last week. And I swapped some cooked Crawfish to my neighbor for the propane I used from his bottle. Win - Win.

Squirrels (I killed) in onion gravy; wild ducks my brother killed; blue eggs from a family I became friends with recently; and Crawfish from the family farm - all in the month of March!
