That gar looks delicious. Are they boney? We don't get any of those up here in Iowa, lol.
alligator gar are pretty good if you cook em up fresh. if you freeze it, the meat turns into mush though. so you pretty much have to cook it as soon as you catch it, or use it to make some croquettes or something like that. also they are pretty hard to clean, the skin is like armor and you have to open em from the back. i used to use tin shears to do it, the skin is that tough. or you can break em open with a screwdriver but it tears the meat up a little
Got a glancing shot on a water mocassin with a B3 that took about 6 inches of skin off. Just after that I caught one just behind the head with a gig. Lopped it's head off but it was still squirming an hour later. Cut off the head and bury it.
