All of this egg talk makes me want to get some chickens... Which is funny because Saturday the food truck is contracted to be at a local farm goods store for Chick day. Now when my brother called me up and told me then he realized my pause then my "wait what?" response was him realizing he did not provide context. It is a day they sell chicks and host an event to teach people how to care for them. I may or may not come home with some chickens guess I will have to see how the day goes because well I will be stuck in the trailer hopefully selling lots of food.

The guy who lives below me said that is a terrible idea my dog will probably eat them. Well as long as she dont get sick she could have a good meal i guess.

So are you going there to sell food, or pick up chicks?   :D


I've wanted to try making some pickled eggs for a while now and even have a big mason jar, but sterilizing seems like a pain in the ...

Also, I finally tried a Popeye's Cajun Chicken sandwich today. It was REALLY good.

You are not canning them you wash the jar and use the recipe Chris or I shared its a short term process and acetic acid AKA vinegar will kill anything and preserve them. If you use my way cut it in half and that is all you need for 12 eggs if it all fits into a container. 2 cans of sliced beats with all the juice 1 cup sugar 1/2 cup apple cider vinegar 12 eggs in a washed air tight container that's it no need to sterilize anything. My eggs have were pickled for 48 hours and they wont last much past that, because I will eat them all in a week or two.

Zero issues. I do keep them in the fridge. Ever been to a bar and see a big jug of pickled eggs on the bar? That is at room temp. too. Never saw pickled with beets though. If RE-using a jar with a metal lid, I put a baggie under the lid. We have all seen pickle jars where the lid begins to corrode after too long in the fridge.

You can sterilize if you want. Boiling water should be fine. Really though, all the viniger and salt will be just fine to keep you safe. Bring the beets and juice and viniger up to a simmer first if you care too. Making it with a hot solution would speed up the pickling/coloring considerably,... I would think.

I've never did the sterilizing thing. I think it's one of those, "let's just do it for good measures" thing. I can't think of any normal bacteria that can survive in vinegar, much less thrive.

I'm glad I didn't steer you wrong on the Popeye's chicken sandwich, Jerry  ;)

People who are writing/filming this up needs to cover their butt from getting sued. So, yes, they will throw in the sterilization process as well.
I've had jars, kept in the basement during the summer months, that lasted for a couple of months before I finally finished it.

First world society today is "safety" zealous. Everything needs to be refrigerated and pasteurized. Fact: raw, intact eggs do not require refrigeration.

It was nice warm day yesterday, since the strong wind, from the last 2 days, had finally abated. I thought burgers on the grill would be perfect for dinner. Swung into the grocery store on the way home from work and picked up all the necessary provisions.
My son and I had our favorite burgers: American cheese, a fried egg, bacon, avocado, jalapenos, lettuce, tomato, onions, ketchup. Used Sara Lee Hawaiian burger buns. Mmm mmm!
