Betty Lou is on a roll with that panini maker and the English muffin bread. I came home for lunch and she had made her home made cheddar mac n cheese. She made it nice and thick then stuffed it between two slices of that bread and grilled it in the panini grill. Nice and crunchy and the cheese found all those nooks n crannies. Soooo good. I came home tonight and she had made one of my low budget favorites..... Curly egg noodles and cream of mushroom sauce. I could eat that 3 meals a day. A little sriracha and pig out.
Finally, we bought a bag of Michigan apples because I love to snack on cored apple and peanut butter. I reckon I wasn't eating them fast enough so she is in the kitchen now making an apple pie out of the rest of them.

Last night Hoosier Momma was still on her "eat it before it goes bad" rampage... She dug into the chest freezer.  :o

You know what she produced?
Alaskan King Crab legs and a pound of Scallops.... WAit... WHAT???
Where did THOSE come from?!
"Cook these up" she said... Scallops were a little freezer burnt but I sprinkled with Old Bay and  sauteed in real butter they came out fine, Steamed the crab legs and tossed a salad with Catalina and Blue Cheese. Ate until we were stuffed and then I finished the rest... waist not- want not. ;)

Tonight is frozen Jacks Pizza.
Scott, you and the Mrs needs to make an inventory list and stick it to the fridge/freezer.

I have a DQ, about 20min away, that makes pretty good food. I don't get there often though.

I used to buy the clearance fruits at a local super market, which was perfect for dehydrating since they were fully ripen, and about half price. I also used to enjoy making beef jerky with inexpensive cuts of beef. I've never tried fruit leather, but I may try it, just to see if my kids will eat it. You may have just motivated me to putting it to use again.

SHE'S DOIN IT AGAIN!!!
 Tonight she found some more Venison Steaks... I seasoned them with some "Canadian Steak Seasoning" and Saute'd more mushrooms and onions. Cooked the V-steaks on the George Foreman to a perfect Med-Rare, and warmed up a can of French Cut Green Beans...
 Now where are them Cup-Cakes from the other night?

My wife is an old fashioned gal, and that's how she does her beans! That ham bone gives it some good flavor, (maybe the marrow), and the ham chunks just slide right off into the beans.  She can make a Three corn Casserole to go with it, and I'm in Heaven!

and I almost forgot, she does hers in the big blue enameled roasting pan so there's plenty!

I passed on breakfast because I knew what Betty Lou was planning. I just had a giant bowl of her chili topped with Frito's, shredded sharp cheddar, diced onion and a dollop of sour cream.
And a big ole ice cold glass of milk. And IIRC, there's a nice hunk of that apple pie left in there for later.
A repeat of the chili for dinner.
