A really delicious way to use the heart from a deer you harvest.
The heart has a mild flavor and is very tender. I like to trim it up and cook it with peppers, onions, garlic and taco seasonings. I use salt pepper, onion powder, garlic powder, smoked paprika and cumin. I like to use a little chulula to deglaze the pan with.
Add some home made pico , refried beans, and some shredded lettuce and make yourself a taco buffet.
We like to serve them on toasted white corn tortillas.
