Just ordered an IZH60 Target Pro from Pyramyd Air yesterday during their Moving Sale. It was hard to pass up at that price and I needed an indoor shooter for the long winter nights. Any initial set up advice or tips from fellow IZH60/61 owners? Also what pellets are you using?

For wadcutters, my rifle does best with the H&N Sport pellets. That is compared to RWS Diabolo Basic, RWS Hobby, H&N Excite Econ, Crosman flat-nose, Crosman Premier Supermatch, Daisy wadcutter, and Gamo Match.
For non-wadcutters, I actually get really good performance from the Winchester Pointed pellets, though not as good as the H&N Sport.
I actually spent some time long range with my 61 last week. I was ringing a 6" gong at 50 yards every time I pulled the trigger once I figured out where to hold. It was fun to watch the pellets lob to the target.

For me, as long as the pellet "looks" good, it is good enough.
In my experience, at 10 meters, the pellet has to be damage or distorted to shoot badly.
So, I shoot the inexpensive Daisy and Crosman pellets that I buy about a dozen at a time, to save on shipping. These pellets are primarily for plinking and casual target shooting.
For more serious target shooting I shoot Vogel Sport. This is the Vogel training grade pellet. I do not shoot well enough to step up to the more expensive match grade pellets.
Having said that, if you are really out for accuracy, nothing beats accuracy testing for yourself, as each rifle is an individual. Mine likes the cheap Daisy and Crosman pellets, yours may HATE it or at least not shoot it as accurately. But be aware that most spring rifles behave and shoot differently when shot off a rest than when held off-hand. That could affect the "best" pellet decision.
Once you find the pellet YOUR rifle likes, get at LOT of it, and keep a good stock on hand.
It is really a bummer to run out of pellets and have to wait a week to order pellets and wait for them to arrive.

Am looking for a competition rifle (side lever) to shoot at my gun club. Looking at the IZH 60 rifle, it appears that you are not able to use a sling if you want to shoot 3 position (prone, sitting, off hand).

Check the rules for your matches. I think the 3P rules changed for 2014.
As I recall slings are legal for 3P matches, but not sure if only for 1 of the positions (prone) or all 3.
BUT...it would be pretty tough to put a sling on a IZH-60, since there is no rail to attach it to.
If you are going for competition, I would get a CPM Daisy 853 (about $100) before using an IZH-60.
The IZH-60 has by far the better trigger.
You can tune the trigger of the x53 rifles to be decent. But it will be no where near as good as the IZH trigger, but decent enough for target shooting for most of us.
The recoil/vibration of the IZH-60 is significant compared to the zero recoil/vibration of the Daisy. For me the lack of recoil/vibration is the key in my being able to shoot the Daisy more accurately than the IZH. If you can figure out how to reduce the recoil/vibration, maybe with a custom tune and spring guide, it might tame the recoil/vibration enough to be usable. BUT...read the rules carefully. A tune-up using custom spring guides might disqualify the rifle.
Or look for a FWB-300 mini.
Or the heavier, full size FWB-300, Anschutz LG-380, or Diana 75.
Again check the rules, some 3P matches follow the CMP rules which specify by brand and model, which rifles are allowed to be used.
