I'm new to the HPA tanks. If I get a Discovery and a 4500 psi Ninja or Air Venturi tank can I get the normal 3000 psi output valve and just watch the gauge till 2000 psi or do I have to get a custom valve with a regulator set to 2000 psi?

The valve that opens the regulator is not very easy to control, so it would be easy to overfill with a 3K reg.... On the other hand, if you ever want to go to a 3K gun, you'd be hooped....

You could, but Crosman gauges are known to be hit and miss on being accurate.

This is the exact setup I have been using to fill my Disco. No issues. Just pay attention. If you can do that, you'll be fine. That said, I just ordered an 1800PSI regulator so that I can shoot tethered.

If I was you, I wouldn't get anything less than a 90 ci 4500 psi bottle. If it comes with a 3000 psi regulator, I'd purchase a regulator in the 1800 to 2000 psi range and swap it out. When you move up to 3000 psi guns, you can put the 3000 back on and the 90 ci bottle will be able to give you several fills. IF you decide to stay with 2000 psi guns you could sell the 3000 psi reg.
I'm an enabler and I bet you'll get a higher power gun relatively soon
especially when you see how accurate and fun they can be.
I would NOT want to try to watch a gun gauge especially filling from a 4500 psi bottle using the small regulator valve. All it will take is a slip up one time further opening the value rather than closing and an accident will occur. I have a 3000 psi gun with a 100 ci bottle and it fills VERY quickly. I have a 3000 psi regulator on the bottle.

I use the 3k regulator on my Disco with no problems at all, crack the valve....close it and check pressure. Doesn't take long to hit 2k, as long as you're careful you'll be fine.

Better/safer to watch the gauges no matter what the tank/what the regulator.
Fill slow/bleed fast/pay attention and you should be good (but lose your focus, and all bets are off)..
