I am looking at pcp’s. I have plenty of break barrels. I do target shooting mostly. Have a lot of powder burners. Been looking at a condor or s510. In 25 cal. Since there are no stones by me looking for options

Very different rifles. Single shot vs repeater. Wood stocked classic style vs tactical look.
My personal choice is easy - Air Arms S510. Based on the OP post, probably the same choice.
It really is a problem not being able to handle prospective models.

The Condor has twice as much power in .25cal, and for all the reasons already pointed out - they are different guns. Now that's not to say that a Condor is not accurate for target shooting. Most Condors are very accurate out of the box, and some with a tune, but the S510 is more ideal and will serve you better as a target gun.

For me the condor took some work figuring out a comfortable hold on it. It's an accurate powerhouse but I'm still not sure it's for me. I added a drop down tank adapter and that has helped alot. A condor has a large aftermarket of things to add to it. If I were you I'd keep looking at what's out there. Some new guns coming from crosman are interesting to me. There's alot of choices in your price bracket.

The Air Force guns can be anything you want, power caliber, custom stocks etc. If one and done go the other way IMO.
My Escape UL started in .25 cal. but I enjoy it more with a .22 slug barrel, but it is an easy 5 minute switch.

Definitely two different PCP’s as said above. I had an Escape .25 that could be a 100ft/lb gun stock! But the AF is really an out of the box hunting PCP with gobs of power. The AA out of the box would definitely be more of a target rifle and the newest guns come regulated. Both great guns but built out of the box for different purposes I believe.

Owned a Condor .25 and naaa!! Just never found it to be a consistent shooter for target shooting on the other hand the AA S510 that I owned was a consistent tack driver. Just realize that in .25 it is a slightly over 40 fpe rifle so not a serious hammer. It also is a much prettier rifle than the Condor

I originally had a .22 AF Talon SS. The Air Force was a nice gun but as a target rifle it was only average. I started shooting field target competitions and quickly switched to an Air Arms S510 Ultimate Sporter in .177. The Air Arms is far more accurate. I can consistently hit 1 1/2" targets at 100 yards using JSB 10.34 pellets. Shot 2" targets at 135 yards with the 13.4 gr. JSB Monsters. I tested several brands and weights of pellets and the S510 liked the JSBs the best. The only drawback I can see to the Air Arms is the weight. Mine with 6-24 Hawke scope weighs 10 lbs. and change. It can get heavy for off hand shooting.
Why do you want .25 cal? .22 cal has a wider range of ammo at slightly better prices. Not criticizing, just curious. People are stretching .22 cal to 200+ yards. I just ordered an FX Dreamlight Tact in .22 cal. I'm interested in longer range target shooting (200+ yards). I also ordered a slug liner for it so I have the option of shooting slugs or pellets. The FX has the option of being able to change calibers.

These rifles are so different from each other that gut feeling tells me the OP is basing the purchase either on total cost or does not yet know what the intended use will be.
my advice: figure out what the intended use will be, identify whether you will be leaving as is or doing extensive mods/tuning, and be honest with yourself about why such a huge difference in the 2 platforms.
The AirForce is a hunting platform. The AA will handle paper and pesting equally, and is a conventional rifle with far better ergonomics.
