Title: Can you change the pressure on a Vortex piston?

I have a Theoben and I might try a Hatsan if the gas ram can be adjusted. Is there a valve on it?

you can with the proper tool. The thing is they come from the factory at the most efficient pressure. If you want to add more pressure you need to use a Hatsan PCP fill adapter. If you want to take pressure out it's a lot more complicated...

I want to lower it. I have a Theoben pump setup already. So an adapter should do the trick. They can't be that high of pressure. I can do 600psi.

You need something that can handle at LEAST 1500 psi. The pressures in their vortex pistons are somewhat close to pressures in their PCP guns (which can hold up to 200 bar or 2940 psi).
