I just noticed what I thought were tiny drops of water coming out of the hose seems to actually be oil to the touch. When I bleed it after filling the gun that also seems to have oil mixed in with it. I'm sure there is water in there as expected, but to the touch it feels like oil. So is this normal? Will the gun shoot it out? Maybe I over oiled the pump?

I think is moisture condensation and a bit of lubricant,my Hills pump has a drypac to limit moisture, but when i service the pump,i find traces of water and lubricant in the base almost ever, only a big disseccant cartridge filter in the intake can avoid this,i think.
Bleeding the pump suddenly helps a bit to spit out condensation from the base.

Like mentioned above, when you open the bleed valve "do it fast" so to get the most water out. It's normal to see water and oil come out.

Alright cool. Until now I've been bleeding pretty slow.

Also, trying bleeding about half way through the fill & at the end of the fill.
