im wondering how often leaks occur in PCP's, and if there is much a difference in the chance of a leak happening between a small bore and a big bore, as a big bore will likely use much more air with each shot.

The only leaks I've ever had where in guns I had been working on. The Mrod .30 and 2260 both had the occasional nick in an oring or unseated transfer port seal. I have not had an issue with the Dragon Slayer yet and I've had it apart a few times. The human variable introduces a lot of oportunity for damage to o-rings while tinkering. Of course O-rings are cheap and if you are going that far you probably already have a nice supply.
In general use, it is a rare occurrence in small or big bore. Proper care and maintenance are fairly simple and will ensure years of service.

For whatever reason, PCP's seem to want to leak after being stored without shooting for an extended time. Would still be holding, but after shooting the first time in months, they seem to be more prone to leaks. Some of my guns have been +5 years without a problem, others seem to want to leak more often. O-rings do seem to turn hard over time, pressure, and a consentrated oxygen enviroment. Often you'll find a hard/stiff o-ring inside that looks like its a square cross section...it didn't start out that way.
To be honest, if it's a little 200 psi leak over 24 hours, I generally tend to ignore it until it gets worse (its a lot easier to find a fast leak then a slow one). It will get worse.
Remember the "bubble" toys when you were a kid.. those little bottles of bubble making liquid and a plastic thing to blow through?...makes an excellet leak finder. Its made to blow bubbles, so dribbling a bit of it at every likely leak spot usually shows the bad seal.
Here is where simple guns shine. The fewer o-rings and seals, the fewer leak points and the easier it is to open up and change 0-rings.
