Mighty good grub Brett!

Grilled up a big cheeseburger today with extra sharp cheese, grilled onions, mustard, ketchup and gourmet burger seasoning! No dinner but dessert was a twix.

I did seitan v2.0 tonight. Simmered the light beige mass (which resembled a BRAIN a bit too closely) first, before cooling/slicing, and pan frying with thinly sliced red onion rings. Had tortilla chips and plenty of guacamole on the side, after a salad. The avocado in the guac, and some soysauce for seasoning the seitan, supply lysine, the amino acid that seitan lacks in order to be a complete protein.

The frying onion smelled delicious and provided much-needed savory flavor. I can't get over how seitan turns such a beautiful crisp-skinned golden-brown when fried yet has absolutely no flavor unless seasoned.

Seitan and tofu must be two of the oddest proteins I have ever eaten. Egg white is the other one. Any of these three has zero flavor on its own. They all have a slight to pronounced bounciness, depending on how cooked.

Both were pork kb? I searched them up and it says Katsudon can be chicken or pork. That and the Tonkatsu sure look like some deep fried goodness from what I found.

Brett that looks great! I just got this sauce and am eager to try it out. Been awhile since I had tenderloin. Hmm...

Just had that taco salad I mentioned before... pretty good but I'll probably want something more later. Leftover slamon patties, mac n cheese and peas in the fridge.
Maybe a salmon pattie sammich.

My wife decided some home made brownies would be nice for the St Patricks day celebration at church. She made 2 big pans of them, 1 with walnuts and 1 without. She was pretty busy cooking other stuff so she asked me to cut up and plate the brownies. They were sticking to the pan and I broke a few getting them out. I didn't want her to have to bring broken brownies to the church so I disposed of every little broken piece.

Did you substitute a gluten-free flour like almond flour, or was the cake basically a big hunk of ganache? (Mmmm.)

Years ago I bought a gluten-free vegan chocolate muffin made by one of the store workers. It was shockingly good, moist, tender, chocolaty. I would not have guessed it was "different." When I asked how she made it so moist, she said it was vegan mayonnaise and almond flour.

Took me another few years before I tried baking with almond flour and I love the stuff.

ah, no, this was from a store-bought mix! lol
She does most of the cooking/baking and has many different kinds of flour's etc. but I just follow directions from a box.

Cooking a new meal at the lodge
Baked "Chicken Parmesan" and potatoes.. with Caesar salad and Texas toast garlic bread.
Served 40 and still brought a lot home... Including the potato that made me giggle.
