Rinse and soak your cup of 15 bean soup mix over night to prep the beans for cooking.
In your crock pot:
One quart of beer
Drain your beans that soaked over night and add them.
1/2 cup carrots
1 cup mushrooms (fresh not canned)
6 green onions diced
2 shallots diced
1 small white onion cut up
1 small red onion cut up
1 small yellow onion cut up
1 red potato scrubbed not pealed cut up
1 white potato scrubbed not pealed cut up
1 large turnip scrubbed not pealed cut up
1 yellow bell pepper cut up
shoulders and rumps of 3 squirrels cut up
add water to cover
Cook on high for 2 hours.
Meanwhile we are going to snack on fried squirrel and prepare our "rue".
Take the backs and ribs of the three squirrels and fry them this way:
Put 1/8" of Avacado or Olive oil in a frying pan on high heat till the oil is hot then put on medium heat.
Put the squirrel backs and ribs in a baggie
Add
1/4 cup of flower
1 TSP Sea Salt Koscher is good
1 TSP Cayenne if you like spicy
1 TSP Black Pepper
1 TSP Cumin
1 TBL McCormic Cajun Seasoning
Shake 'em up till they are covered with flour.
Fry over medium heat 5 mins on each side.
Save the grease in the pan to make your gravy later.
Lay them on a folded up paper towel to train
Now while you are waiting eat 'em up.
Make a little dark brown gravy with the grease and set it aside.
After two hours are up.
Take two cups of the liguid out of the crock pot and raise it to a boil.
Gradually add whatever flour and seasoning is left in your baggie. Cook until dark brown. To make rue you just make gravy like always but cook it till it is dark brown. Be careful when adding rue to your crock pot, let it cool somewhat first.
Add it back into the crock pot and stir it in.
Add:
1 TBL Sesame oil
1 TBL grated ginger
1/4 cup apple cider vinegar
3 large garlic cloves crushed and diced
salt, soy sauce, and cayenne to taste.
Cook on high for another two hours.
This is a crock pot stew.

Michael, I like the looks of this one - but, one question: What Cajun seasoning do you recommend?

Thanks for sharing the recipe. My girlfriend whipped up a stewed tomato and potato based squirrel crockpot dish that came out really well. She threw a whole young squirrel in it overnight, and by the morning, it was falling off the bone. No recipes with her- she is a food artist that cooks with whatever is in arm's reach. If only I was a more effective hunter, she could have used more than one squirrel.

Yeah, I've made the same argument with the local game wardens, who are my friends, but it gets me nowhere. Funny thing though, when I asked them why the small game season on Long Island starts November 1st while the rest of New York starts on October 1st (Sept 1st for squirrels) they all told me that they had no idea why it's different. One of these days I'm going to have to send an official request to their headquarters in the state capitol just to satisfy my curiosity and find out the reason.
