Glad I could help Kerry. If I can also pass another suggestion: get your hands on a nice 15 pounder and deep fry it. Sweet mother it's so tender. My 13yr old son can wipe out half of that pig.

My bad.Thanks.

Try smoking pork with apricot wood. It imparts a natural sweetness to the pork. MMMMMMMMMMMMMMMMMMMMMMMMMM Good!
i been smoke'n wild hog hams with pecan for many years.and other cuts for pulled use.no problems.....no such thing as a "lean" feral hawg in LOWEST alabama. even the choice size....piglets, it just takes a couple;)

Our pigs stay lean cause' they get so much exercise running away. we have bears too here, but there not a threat to the hogs here.i have several game cam video's of 200-300lb hogs running off 135+ lb bears away from corn feeders and bait blocks. i only take the piglets to eat.....
I envy the Hawaii guys pit roasting their hogs. That looks so freakin tasty. I hated finding that 30lb piglet I unknowingly killed with that other hog recently both in 1 shot. Would have been great eating but the vultures were grateful at least when I found them feasting on it a couple days after being dealt with. I'm looking forward to eating a piglet one of these days. We don't really have bears in our area just black panthers and cougars.
