This will be a first for me. I read as much as i could find and there is a lot of information on here about brine, parboil, frying.... etcdo you keep them whole, quarter or debone? Right now I have a whole one in a salt/lemon juice brine for over night. In the morning I was planning to throw in a pot and boil for....... ? 30-60mins? Then I was going to lightly brown in a pan to eat with breakfast. Do you boil whole then pull the meet off like pulled chicken or do you guys cut the meat off first? Thanks guys.
I cut my squirrels into pieces which include 2 front legs, 2 rear legs, and the back up to the rib cage. The head and rib section gets thrown away. I mention the head because my uncle will never head shoot a squirrel since he also eats the heads, however there is too much work to prepare a head for cooking for my taste!

a BIG platter of fried squirrel and all there was a row of fried squirrel heads artfully arranged around the edge of the platter with the front teeth all facing out . Well.......after the blessing was said the FIRST thing the young nephews and nieces grabbed were the SQUIRREL HEADS! My wife was about to "up chuck" when she heard all the skull cracking and the sucking out of squirrel brains.LOL.......my wife did say that the leg she had WAS pretty good!
