Nobody loves a good steak more than I do, and venison backstrap can be used for making "filet mignon" easily. Take a doe (not buck) backstrap and cut it into 1" thick slices, cut across the grain. Take three pieces sitting side by side, and wrap a piece of bacon around them, secured with toothpicks to hold the "steak" together. I like a good amount of ground black pepper and just a little bit of salt on mine. Grill or broil until done to your preference. It's as good (imo) as eating a good beef filet mignon.
Try white pepper. It's soo good.
