I am relatively new to big bores but not to airguns. If you are planning on using your rifle for hunting, I recommend you watch Mr Hollowpoint's (mrhollowpoint1) videos on youtube. He recommends you fill bottle to max 3625 psi and zero gun for that pressure refilling gun each shot with your tank. On game your first shot is, of course, your best chance and loading another slug is not likely possible before quarry has gotten away. For 240g slugs he recommends setting power wheel nearly as far toward the back of the gun as it will go. I did this and have first two slugs very close with progressive drop off thereafter.I would move scope forward until relief is right. There are some thicker butt pads you can buy on ebay, I believe.
This is my experience only. I believe you are correct in that 3000 starting is what is causing the issue. These valves are not very tunable. When running a lighter slug, it is advised to set power wheel high (back). This is to help get the shot cycle started better. A light slug runs away before pressure can get high enough to cause the cycle to fully work.
Ammo Guide: Light 122 Medium 350 Heavy 495 I would start with about a 385 grain ammo to hunt with because these guns perform best with slugs.Start your tuner wheel closest to the tank side and work your way back. Turn it a ¼” and shoot a couple shots. Do this until you find out where your gun performs best with the ammo you choose.
Also, these valves SEEM more efficient at higher pressure. I don’t know that for a fact but the lower the pressure at firing, the larger the pressure drop at tank. Let the pressure get too low and ALL the tank dumps. You want as much eye relief on that scope as you can get if that happens.
I have a older Texan that I put a CF tank on and modified valve I've found that 3600psi is the sweet spot for mine I get 3 good shots that are very close together from 25 yards out to 100 yards I sighted in at 25 and its shooting the same at 50 I then have to turn my scope up for 75 and again at 100 yards I put a strip of white medical tape on the top turret and pen in the yardages so I know exactly where I need to be I also added a pair of no limit rings for better adjustment I'm shooting a 280gr HP cast from a NOE mold.

I got the compressor and bottle when I bought the gun so I think I started out okay. =)
