You can make whatever you want with wild hogs, it's all in the preparation.

Precisely, but leaner pork may not do well for pulled pork when smoked low and slow.

I thought you might have had some experience smoking wild pork low and slow.  My bad.

I personally don't smoke my pork, much prefer it done other ways.

But the wast majority of the boys here do smoke them and it comes out just fine.

Round here a 50 lb. piney woods rooter is considered the perfect eating pig.  Just about right for pit roasting overnight.  They tend to run lean but a little extra pork fat from the butcher will take care of that.

When my son turned 18 I took him to visit a friend in the North Carolina mountains we spent 4 days in the woods hunting wild pigs. The one my son shot was an older mature boar that was ~ 190lbs dressed out, mine was a young sow the boar was delicious but way to tough for anything other than sausage. The good news at the time was that my son's one good friend's parents were off the boat Italian and his mom made killer sausage with the meat for us. I gave his friends parents a hind quarter and all parties were quite happy with the arrangement. The sow was tender and delicious also and way more flavorful than domestic pork.

  As I said before MMMMMMMH piglets!  We have a major nuisance Bear problem here.  This is the least populated Florida county other than the glades'. For the last fifty years FWC has been "relocating" nuisance Bears here. We have way too many and they are the criminal masterminds of the Bear world!   ;D

he has pictures of 150lb black bears in his neighborhood destroying
garbage cans on the road for next day pickup !!

and Paul = Rat Sniper in Navarre Fl, has them too.

they have not got into local neighborhoods quite yet but there here in my swamps of the farm !!

I envy the Hawaii guys pit roasting their hogs. That looks so freakin tasty.

I hated finding that 30lb piglet I unknowingly killed with that other hog recently both in 1 shot. Would have been great eating but the vultures were grateful at least when I found them feasting on it a couple days after being dealt with. I'm looking forward to eating a piglet one of these days. We don't really have bears in our area just black panthers and cougars.

We have cougar (not Florida Panther) here but they are rare.  We had the first Bear hunt in Florida in 20 years here about two years back.  The administration of it was so botched that we got terrible publicity from it.  If we ever have another one I'd trade Manny a bear hunt in Florida for a hog hunt in Hawaii!
