Just kidding. You'd have to use a punt gun on one of those flocks that form in the late fall.
However, I have heard that they are a game bird in some parts of Europe where they are native. So I tried one and it wasn't bad. The only part that is big enough to mess with is the breast. Shoot several of them and you'd have enough for one person. It's kind of like a cross between beef and chicken, if that makes any sense. Maybe like ostrich meat?
I had a few in the freezer from last fall so I brought them out for appetizers at a wild game dinner. All five of them disappeared and my kids, who are picky about anything that comes out of the woods, all liked them.
Does anyone else eat them?
P. S. These were rural, healthy birds, not the disgusting ones that live in town and eat garbage. I would NOT eat those.

I've eaten starling many times and I love it. I used to have a permission on a farm where it was common for me to shoot many yellow beaks during a pesting session and I would always breast them out. sometimes I would actually pluck the entire bird, as you can get some meat off the legs, but mostly I would just breast them out. My favorite method of cooking was simply to season them to my liking, usually a cajun based seasoning, and quickly fry them in oil with some bacon fat mixed in for extra flavor. Absolutely delicious.
I don't have that permission anymore and for some reason the starlings stopped visiting my neighborhood a few years ago so I haven't been harvesting them for awhile now, but they are indeed delicious and I miss having starling for lunch

It's weird - any kind of blackbird (starlings or grackles, both agricultural pests around here) is a no-go for the cats and dogs on my place. Our cats inhale HOSPs like candy but look insulted if you offer them a blackbird.
