Animals including people know when we are being watched. Some telepathic sense we cannot quantify but we know it regardless. My mother was an OR nurse. She hated hunting season because reliably deer hunters would shoot squirrel hunters thinking they were deer and squirrel hunters would shoot deer hunters (in tree stands) thinking they were squirrels. Wear orange, identify your target, do not glass with a rifle scope.

LOLPretty funny!I just bought 113 wooded acres in Arkansas come deer season I'll be wearing orange in my woods. Even though nobody's supposed to be on it. I'm not taking chances. Animals see and hear movement. Also animals get used to common sounds. Deer will graze on the side of a busy interstate but will bolt if they here my truck moving through my property. On other occasions I've had to stop shooting powder burners because a deer walked behind my target at a busy range. I had the same thing happen when I used to shoot a lot at a friend's 275 acre cattle ranch. We used to see deer there when we were shooting during the year, I bet the deer got nervous when the owner shut down target shooting during deer season. The change to silence probably scared them more than the gunshots. I could have shot two dozen deer while drinking beer and shooting off the deck during the rest of year. In fact one afternoon during deer season the owner and a buddy went up the ridge into woods hiding their scent wearing full camo. Meanwhile the wife and I were having a great time guarding the porch with beer and music. At dusk a buck walked out of the woods into the hay field. My wife ran into the house and grabbed her 30-30 Winchester lever gun and shot the buck 100yds away offhand standing in the driveway. It was the only deer seen and harvested that day.I totally think people put way too much value in camo and even stealth to a degree. It's when animals see or hear something out of the ordinary that alerts them. I'll be shooting and walking my property all year round and the animals will get used to it. Come deer season a gunshot or a person walking won't be out of the ordinary. Well except for maybe one deer.
No matter what the design some fabrics "glow" from UV light. I suspect many animals can see this glow much better than we can. I had this pointed out to me one night when we were doing a drill during a full moon. Many people were laid out in the woods and the ones with blue jeans stood out much brighter than any other type of clothing or color.

I am not sure about animals, mammals in particular, seeing into the infrared spectrum. However, there is now evidence that some animals can sense infrared and children and young adults have been shown to sense infrared so it is possible. Some studies suggest the infrared on game cameras may be sensed. But it is debatable. These animals are are known to see or sense infrared:
13 years as firefighter/emts. Yes you can smell heat. Intense heat causes odors to do strange things and after a while your sense of smell learns to detect these very minor changes. Trust me its extremely hard to explain but it does happen. Its similar to someone being able to smell the odor put off by copperhead snakes as cucumbers. Another.is smell cyanide as bitter almonds.
