Ok, so its 3 days later...that means by venison has soaked in ice for 3 days(gets the "gamey" taste out) and ready for processing......but this time I'm gonna process it later so I'm just fresh freezing it til I decide what to do with...If you're wondering where the rest of him is, I give all the front half of my deer to a friend who loves it...so, this is the end of the line for this feller...PS...I'm really waiting to see if I get a dehydrator for Christmas...I love jerky

The soaking in water really is the best way to get the blood out. Not only does the water leech some of the blood out, the water also gorges the cells at the microscopic level, causing them to burst when frozen. When they thaw, they release the blood that was trapped in them. There's no better way to get bloodless, clean tasting, red meat. The water also protects the meat while frozen and extending how long it can be kept without freezer burn.
