It has been a long time since I thought about this because we don't many Cotton Tails around here now. We used to make gumbo with smoked rabbits and Cajun sausage. After cleaning the rabbits, we would hang them in a commercial smoke house. (The father of one of the friends had a elimination house/meat market/grocery store.) After smoking for a while (?), we would keep the smoked squirrels refrigerated until the party. We usually had the party a couple of days later; otherwise, we would have frozen the smoke meat. Good friends, good times, good memories.
(?) <--- Does anyone know what would be a normal length of time for the smoking process to be done correctly?
A little side note, at one of these gumbo parties, I first passed my eyes on the little girl that has been my MRS. for all these years.

I've never smoked rabbit myself but why not. I have read and found from experience that smoking for 2-3 hours is plenty then kick up the heat a little 220 or so and finish cooking to an internal temp of 160f. Slow cooking is the key. High heat and that rabbit will dry out quickly. Low heat I would guess 4-5 hours. I bet it would make an awesome gumbo!
Might have to give it a try. Makes me think squirrel might be worth a try.

Sadly, the friend that did the smoking for the gumbo died several years back. A smoked rabbit and sausage gumbo in his honor would certainly be a nice tribute.

Today I had a hankering for some smoked chicken so just a few minutes ago I seasoned a whole chicken with some of my super secret chicken rub and popped it into my smoker.... then I decided to check the Hunting Gate and I see this post
and it got me to thinking....
I smoke an awful lot of meat, wild and domestic, but I've never smoked a rabbit so I'm going to defrost a couple of rabbits that are tucked away in the freezer and give it a try. Reading your post made my mouth water. As you know rabbit can dry out very quickly if you aren't careful but at the same time I'm thinking the mild texture and flavor of the meat should make it ideally suited to absorbing the flavor of the smoke. I would think a nice mild smoking wood, like apple or peach, would be perfect. I'm thinking a stronger wood, like hickory or mesquite, might overpower the mild qualities of rabbit meat. I ran out of peach wood, which is my favorite, but i do have a good supply of apple so I think I'll give that a try using the "low and slow" method to make sure the meat doesn't dry out. I'll report back on my success.... or failure.
On another note..... I have smoked squirrels several times and they came out simply amazing. Best darn squirrel I ever ate. If I remember correctly I used peach wood a few times and also used pecan wood a few times and they were just amazing.
Anyway, thanks for bringing up the topic of smoking rabbits.... will let you know how I make out. Of course if they come out good you'll have to give me your gumbo recipe as I've never made gumbo in my life

I always save my clippings when it comes time to prune my fruit trees. I'll be cutting down an apricot tree this weekend and restocking my wood supply. After I posted the other day I started thinking about a brine for rabbit or squirrel. Maybe some maple syrup or something like that. Brining might help keep the meat moist. I always brined turkey breasts but haven't done any in a while. Have to look for my old recipes. I would tell you Jeff I have some good Gumbo recipes but what does a michigan guy know about gumbo

Guy, I am curious about your name (LaFleur). Around this Cajun county, there are many families with that name. Might you have relatives that came to my neighborhood? And if that is true, good Gumbo may be in your genes.

Actually my ancestors are French Canadian. There could very well be a few long lost relatives down you way. Probably explains my love of Crawfish and everything wild.

I live in the apple capital of the world and have really come to love the sublte flavor of apple smoke...
I do at times go with mesquite because of growing up in Nevada and Texas (especialy for chicken and turkey ) so I do miss it at times.
But
I love apple for T-bone, quail rabbit, pheasant and on and on... I keep temps between 160-200 for 2-2.5 hrs but for some brisket well about 10 hrs.

sounds good, be liberal with the rub,wrap in baconand smoke for 3 to four hours. catch the drippings. after smoking add water to the drippings place meat in and cover with foil let steam for another 3to 4 hours . meat will fall off bone yummy. too bad its not that season here in iowa. I may just have to place a venison roast in the smoker this weekend

tstromgren, tomorrow morning is the opening of our Spring Season here in Louisiana. I may be lucky enough to get a squirrel or three. Your recipe will definitely come in handy. Thanks, Brother.

well unfort here in iowa we have to wait until fall so I just do a lot of venison. got to gring 100 or so lbs/ then make some summer sausage, and slice some for jerky. im hungry . as far as rub goes I use a few my fav is one I make but fat boy is good have used on venison.
