Got a bit of instruction from a friends on cleaning squirrels. Evidently not quite enough as I have just read of some 'armpit scent glands'...any-hooo I stripped the squirrels and quartered them and into some brine and wine( late harvest, MI Reisling ) and there they sat in the fridge for two days. Took 'em out this afternoon, rinse and black pepper( not too much ) and some olive oil and they warmed up on a bowl. Hauled out a chicken cooking bag and some potatoes. Partly cooked the 'taters then drain and into the sack. Followed with the squirrel quarters. Into a 350F oven for 1/2 hour, then down to 220 for another 20 mins...
They were excellent. Not so much meat on 'em, but what I got was perfectly complimented by the taters.
