You have about three options. The first and simplest is to live with it. The second would be to build a barrel bending tool as shown in the GTA library and put a bit of a downward bend on your barrel to compensate for the upward bend. The two bends needn't be in the same place, just in opposite directions. The third and most expensive option is to purchase a new barrel. Good luck to you, whichever option you choose.
If what you say is correct then the rifle will never shoot well. With a wobbly latch bar then every time you close the barrel the muzzle will be pointing to a slightly different place The only solution that I see is to replace the pin with a slightly larger one. You could do it yourself or maybe a tool maker to re_drill the the hole and and fit a new pin Perhaps you could solder the pin in place. Maybe ,that might work; maybe
I've been bending my HW barrels for years to put my "point of impact" within an inch or so of my "point of aim" at my 30 yard zero distance with an optically centered scope so the scope erector spring/s is/are always in tension which minimizes "reticle creep" from the two way springer recoil if the turrets are turned near maximum. Plus, adjusting the turrets to "near maximum" can/will limit the amount of "poi adjustment"..........
Nothing wrong with shims. Nothing wrong with a slightly bent barrel, either, but it does change the position of your cheekweld, a little. With a slight upwards bend, you'll end up with a slightly lower eye position on the stock. If the stock was already requiring a tight squeeze on my cheek to get a sight picture, then I'd consider straightening the barrel. If it improves my cheekweld, then I'd probably leave it alone.

Matter of fact, even at only 18 yards the only way I've been able to adjust the poi by a specific amount by barrel bending was to shoot a few groups.

I mean you can't even see it, it's not bent by much. Three inches at 18 yards is only 60 clicks on the turret, if 1/4" per click at 100 yards. No shims required.BTW you don't have to re-post every picture you own, multiple times in every post in the same thread, Ed.
OK-you got a Gamo , I bent mine by accident while using th homemade spring compressor, was a silent cat, after I put gun back together noticed that it was bent skyward to the tune of an inch, according to my straight edge, what to do, after much pondering, decided to try to bend it back.So while at full cock, held gun between legs, scope to my chest, gun verticle, gave the gun 2 handed hug from end of barrel, checked it it was 1/4 inch straighter, so went to full cock again, gave small bear hug, checked it again, and it was right on the perfect of my straight edge, it worked for me, cost nothing, gun is my favorite shooter, all I can say is it worked for me, and was the gamo synthetic coated barrel, have done other steel barrels with large vice and barrel inside a pvc pipe..Good luck, happy hunting
