Why is walnut and other woods more desirable than beech? Is it that other types look better or is there something else with beech that a lot of people don't like it?

Because it's a pain the backside to stain and have look good...plus a nice chunk of nicely grained Walnut stained and oiled right just looks so much better.

I'm no expert, but... I've noticed that walnut seems to be prone to having much more desirable character. Especially when well finished. Not to say the odd piece of beech can't surprise you; but walnut seems to be known for it.
I still wish Diana would at least offer a walnut stock option...

As for me I always asked "what about maple?". Nothing to me looks as good as a curly maple stock.

beech is a good stable and strong wood for rifle stocks. it's just not considered as pretty by most. and as mentioned it's harder to stain using conventional methods. research " chemically staining wood" , some processes will really give a nice look to beech and the chemivals aren't prone to splotchiness as badly. easier to control than normal stains you'd get at a hardware.

Beech seems softer, and lighter weight. And it is kind of a yellow-white color and often without much character.
But I think with a light colored stain it can offer a nice contrast to blued steel.
Walnut is a rich brown with more pop to the grain and can be sanded smoother and I believe has a better feel to it.

Ive cut stocks from both.....
Straight grained walnut (not the razy XXXXexhibtion crotch stuff....) is gotta be IMHO the easiest stuff to cut and shape, even more so than the beech, and much much easier than figured maple. BUT if yo move to figured walnut, then its not as easy or as fun.......
