You are not canning them you wash the jar and use the recipe Chris or I shared its a short term process and acetic acid AKA vinegar will kill anything and preserve them. If you use my way cut it in half and that is all you need for 12 eggs if it all fits into a container. 2 cans of sliced beats with all the juice 1 cup sugar 1/2 cup apple cider vinegar 12 eggs in a washed air tight container that's it no need to sterilize anything. My eggs have were pickled for 48 hours and they wont last much past that, because I will eat them all in a week or two.

This way they supposedly keep for more than 48 hours.Your way does sound much easier though.

When I was a kid, we would eat the hard boiled eggs a week after Easter. Never got an upset belly from that? I wonder how long they last if left in the shell at room temp.
