Decided on eggs Benedict. Already had everything I would need at home including Easter ham. At the store, I'd spotted really great looking asparagus, so I knew that would go nicely with the hollandaise sauce. I saw a YT video of Alton Brown making poached eggs, and she enough, these were the best poached eggs I've ever made. Very little egg waste.Man Dinh, eggs benedict is one of my favorites. Looks like you did a really great job with them. The asparagus was a good idea too.

Some pickled eggs I started Sunday night.
First time I made them my self I usually have my mom make them for me. I should be able to keep it going for a while I think. Not sure how long it can last before it goes rancid but the vinegar should keep it a good long while.
Had a date with my wife. Been a looooong time since we had pho’.

Well done with that bowl, Better!Growing up, mom used to gripe, about wastefulness, when we didn't finish every morsel of food including the broth from our bowl. Well, this actually applies to all food, not just pho.
The new little egg steamers are awesome. I have not had a tuff to peel egg in over a hundred eggs. Mine does up to 7. Some require poking a hole in the top and others don't. Elite Cuisine model EGC-007. Mom got it for me from the net??? Hey,.. it works.

Hey,.. it works. How difficult it is to peel an egg is typically dependent on how fresh the eggs are. Very fresh eggs are a PITA to peel! We got a bunch of day fresh eggs, from friends, this weekend, and I medium boiled about a dozen of them yesterday. Man, they are tedious to peel!

Walmart large eggs. Fresh?,.. who knows? Before that,... I tried about everything. Hit or miss. If this one ever dies,.. I am buying the exact same unit (assuming they are still for sale).

Put in fridge. Add some salt if you want. Good for at least 2-3 batches over a couple of months. It still seems fine, but I go ahead and do up a fresh batch (solution). The new little egg steamers are awesome. I have not had a tuff to peel egg in over a hundred eggs. Mine does up to 7. Any of you ever pickled Quail eggs? Dad loved those.
Quote from: Bicycleman on April 06, 2021, 09:03:40 PMAny of you ever pickled Quail eggs? Dad loved those. That seems like a lot more work compared to their much larger cousins(chicken eggs). I don't think I've ever had quail eggs. Do they taste much different than chicken eggs?
All of this egg talk makes me want to get some chickens... Which is funny because Saturday the food truck is contracted to be at a local farm goods store for Chick day. Now when my brother called me up and told me then he realized my pause then my "wait what?" response was him realizing he did not provide context. It is a day they sell chicks and host an event to teach people how to care for them. I may or may not come home with some chickens guess I will have to see how the day goes because well I will be stuck in the trailer hopefully selling lots of food. The guy who lives below me said that is a terrible idea my dog will probably eat them. Well as long as she dont get sick she could have a good meal i guess.
