Oh this is my new favorite way to cook 'em.
I shot 2 big old males grey squirrels. Cut them up into lower back (discard upper back and rib cage) and 4 legs.
Soak the pieces in a 1 table spoon salt to cup of water brine for about an hour. Drain the salt water off and pack them into a pint jar. Cut a slab of onion and stuff in there with 'em. Cook in pressure canner for 1 hour at 10 lbs. If you have young squirrels you might want to reduce the time. These were two old boys. We were canning venison and had enough room for one jar of squirrel so I experimented.
When I opened the jar the meat pulled off the bone so easy. I put some meat in a skillet and dumped salsa on top. Simmered it long enough to get most of the water out of the salsa and made some awesome burritos. I added the rest to some ramen noodles. AWESOME.
Canned squirrel, who knew.

I have only Fox Squirrels in my hunting area. And when I put one in the jar, he kept crawling back out.
Just joking.
That sounds like a very good method for storing squirrels for a period of time. In the freezer bags, the meat get freezer burn fairly quickly. I am going to price one of those pressure canners - Merry Christmas to me. Thanks for posting.

That's a great idea! I don't know why I never thought of it, since I've canned deer lots of times.
