I'm not too worried about how long it takes...I just watched several you tubes...I like cutting the head, feet and tail off then doing the shirt and pants. Cut up each side of the genitals to the rib cage and pull the innards out. Then fry them in two halves. Some white peppered gravy and flaky biscuits.
I know this is a really old thread, but an important piece of info seems to be missing:No one mentioned removing the squirrel's scent glands. These are found in the animal's "armpits" so to speak. - Front legs only. They look like little blobs of fat and are not hard to find or remove.I've noticed that some squirrels have much larger ones than other squirrels. It might be an age thing, or maybe a male-female differerence.Anyway, they will surely taste better with these removed.
I’ve always used the method described in post #2. Now that I’m older and a little wiser (Mrs. Bent Skirt would dispute that though ) I use a small 9” Gerber hatchet for getting rid of the head and paws. It saves the knife’s edge as well has my hands this way, as for time it takes me right around 5 minutes from beginning to end.
