Made our bi-weekly run to the big city yesterday. Bettly Lou was in search of an elusive jar of Litehouse Slaw Dressing. Passing by the bakery we noticed the baker stocking the shelf. A golden glow appeared from one particular loaf. Pumpernickel and Rye swirl. Next stop was the deli for some freshly sliced pastrami and corned beef and a pound of baby swiss. Thousand Island was conveniently located next to the slaw dressing and just an aisle over from the sour kraut.The sweetness of the cole slaw complimented the Ruben (in our favorite form) grilled in the Panini grill. Plenty left to revisit today.
I haven't been here in a while but I see Ya'll been eating good. I love those smoked fish snacks!!!I cooked a boneless cornbread stuffed chicken from http://www.hebertsmeats.com/ and made a smothered greenbeans and potatoes with onions and smoked sausage. This was quick, easy and good.

Yummy!Sautee a small chopped onion in olive oil for 5 minutes.Add cut potatoes and cook for 5 minutes to flavor them with the onion flavored oil, most people use red potatoes because they hold together better but I used russets so it would cook faster.add 2 cans of greenbeans and the liquid2 cups of chicken stock or water and 1 bouillon cubesalt and pepper to taste and set heat to a high simmeradd diced smoked sausage and cook till most of the liquid is gone, should be about 15 minutes.Taste, adjust seasonings and serveYou can use any smoked meat in here and it'll be good. Large chef salad (ham, eggs, mushroom, onion, green pepper, tomato, bacon and 3 cheese. I like honey mustard dressing. Cottage cheese and club crackers and an ice cold sweet tea.. Betty Lou's banana nut bread for later.Tomorrow I'm thinkin chili slaw dogs.

Thanks for the compliments of the food here. We do eat good and just think, that's how the poor people eat. You have to learn to cook what you can catch and make the best of it.Tacos and enchiladas tonight, I need a break from the normal food we eat before the holidays start. I used the green enchilada sauce and it's a little different but good.
