While I finished putting the plywood on the exterior of the new shop Betty Lou whipped up some home made chicken pot pies in a muffin pan and a home made apple pie. Some extra sharp shredded cheddar and sriracha on the pot pie and ice cream on the hot apple pie made me a really happy old dude.

Am I the only one here that would have put the cheddar cheese on the apple pie?
Never really liked cheddar, too bitter, I would opt for either another slice or a slice of cherry pie on top. In a pinch a scoop of vanilla icecream or a very small slice of NYC cheese cake.
Here is a video Granny and Granddaughter , this version like all I have ever seen is different then my family's right down to the crust. But the taste I am very sure is wonderful. Again German beer or red wine and a piece of fruit. We like this so much mom made it twice a year , in flush years 3 times. The young woman actually said what I realized as a kid, this is expensive to make, it was a treat at once a year a god send at twice, and triple blessed when she could afford to do it 3 times in a year. And no gifting except to very very few people. To eat this you had to visit us, NO ROADIES!! Except in my lunch box. If you go into an Italian Pork Store around NYC you may be lucky enough to find one that makes this and sells it, by the slice by the pound. That is, if you live in a big city. Down in Louisiana they have lotsa Eyetalians and you may find it there. Up north places like Chicago, Boston, NYC Philly all have enough of us to maybe have a place to score a slice. Good luck if you make one make it well and you will need to make it 2-3 times a year. Our pies are made in standard 8-9 inch pie tins. There is some red pepper in it, but more is available to those who need it. Hot sauce adds an unwanted sour to it, go flakes if heat is needed, that is what I do. And give it 20 seconds in the microwave. This pie was left out never went bad, actually it never lasted long enough.Ciao

I watched that video, it looks like an Italian frittata with cheese instead of eggs. I might need to try to make one since I'm a cheese addict.
