German Skillet Dinner1 med onion, diced!-2 pounds ground beef (I use the super-lean)1/2 cup dry rice1 1/2 cup water (I add chicken bullion powder for flavor)1 small head of cabbage, chopped into bite-size pieces1 can Rotel tomatoes (drained)2-3 tbsp. butterDice the onion and cook on low until starting to caramelizeAdd ground beef and cook, stirring occasionally, until done. Chop the cabbage and make a thick layer of cabbage over other ingredients already in bottom of potDrain the Rotel tomatoes and pour them on top of the cabbage. Place lid over pot and simmer for 30-40 minutes until water is absorbed and rice is done. Stir to mix and it's ready to serve.

Somewhere along the way, inhaled a banana and one of them tasty Lidl "energy" bars. I've been eyeballing a couple other "health" snacks on my desk- keep some handy for days like the today where the phones never stop.

Me and my wife are trying a chicken curry crock pot meal...she made these through college and we've got 10 different recipes made up and froze. Have never had curry before but I'm excited to try it. Will be served over a bed of rice. Then off to the first youth group of the year!
Tonight was a normal meal. Chuck roast in the pressure cooker with some of my beef stock and onions served with steak fries par boiled then fried and smothered okra. Just country awesomeness!!!
Jerry-1-2 pounds ground beef. I actually use less than a pound, but I'm not a huge carnivore. 1 pound would be more than enough for me, but most men I've known like quite a bit more protein in their diet, so 2 would probably be a good starting point for you. It IS a simple fix. That's one of the things I like about it!
