4 serving:
10-12 dove breast halves,skin & rib cages removed, seasoned with salt & pepper.Broiled until rare & then cooled.with squirrel you will only need 4-6 depending size.
1/2 cup Monterey Jack cheese,grated
1/3 cup Ricotta cheese
2 garlic cloves minced
1/4 cup yellow onion,chopped
1 tablespoon dried italian seasoning
1/4 cup seasoned bread crumbs
40 round or square won ton wrappers
1/4 cup cornstarch mixed with equal part cold water
instructions:add cooked & cooled game to a food processor & pulse until cut into pea sized pieces.add next 6 ingredients & pulse untilingredients are finely minced,but not obliterated.to make ravioli,place 1 won ton wrapperon a flat surface & spread a thin layerof the cornstarch mixture aroundthe outside edges.place a small blob of filling in the center of won ton,about the diameter of a 50-cent piece & about 1/4inch high. placea 2nd won ton wrapper ontothe moistened edges of the bottom wrapper.place finished raviolis into a gently boiling pot of lightly salted water. use plentyof water &don`t crowd thepot with too manyravioli at a time.cook for 3 to 4 minutes or until raviolis are tender & translucent. add your favorite spagetti sauce or vinaigrette. eat & enjoy........
