With the raging popularity of bullpup airguns going on right now, what are the experienced opinions of using that airgun style for Hunter Class Field Target (or perhaps maybe any Field Target class)?

VERY poor choice ...
Due to the extreme height scopes get mounted on pups, the correction required at the closer ranges makes range finding accuracy SUPER CRITICAL. If used as an OPEN CLASS rig with "Clicking" the turret for elevation changes would be doable enough .... as a "Hunter" class rig using holdover values. Very difficult proposition it would be !!
JMO tho & your mileage may differ
