I thought they both came out great, especially the Indian style. I polished both batches in their entirety since my wife and kids won't eat cute little furry squirrels. More for me! lol I told my wife a story about a mercy dinner at a rural gas station down in western South Carolina when I was stationed down in Charleston SC. I was riding my305 Honda on some back roads and threw the chain. Ended up pushing the bike about 6 miles to the gas station he was just closing as I pushed the bike into the station. I asked to borrow a couple wrenches and he told me he was going out back to the house cause momma had just called him to dinner. I was welcome to join them for dinner and we could take a look at the bike after eating. The stew was amazing and being the typical 20 year old put on my best Oliver face and asked for seconds. The old guy looked at me and inquired if I really wanted more of the Possum and Raccoon stew . I said with a hungry smile yes please and perhaps another chunk of the awesome corn bread to sop up the gravy true and my wife looked at me like I had two heads when I told her that story
I will add Thai curry to this list as well. Fish & Oyster sauces do wonders on taming the gameyness. It makes a a great tasting meal even out of what would be meant for ground. I cut up that mess into small bite size stir fry chunks. Then you get a can of green or red curry and some coconut milk! Man oh man! Pair with a nice cold Sinhga!
Curried game meat is delicious, especially when you add some coconut milk to it during the cooking.Nice dish & presentation Dinh.
That looks so good!

It was really good!I like your culinary style, Ben! Go for it! I haven't thai curried squirrel. Have done rabbit though. I would go with the red on that one. Deer is really good with the green curry. Actually whats good too is marrinade meat of choice in fish and oyster sauce. Then stir fry say with onion, garlic and ginger. Then when about done add in a bunch of thai basil. Bro... That's all I'm saying... =)And I love the crock pot game meat with cream of mushroom deal. I add in a packet of powered onion dip seasoning to it. Really good with deer neck or bear ribs!
