I'm really new to PCP. I have a Hill MK5 pump. I wonder how much air at say 200 bar it will pump before I'll need to rebuild it.

Honestly, the biggest factor is in how you use it . . .
If you go slow and steady on the strokes, pausing a second or two at the bottom and top for air and heat transfer to occur, and limit your pumping sessions to about 50 strokes or so, and vent the pump to blow out moisture (and further cool the pump) and allow a good 10-15 minutes for it to cool down before using it again (if needed for more pressure in your gun), then the pump should last a long time between rebuilds.
But if you go at it like crazy, pumping continuously until the gun is full for 100 to 200 strokes, then you will need to rebuild it in very short order. That will cook the small inner o-ring on the last stage of compression, and you'll have to take it apart to get to it for a replacement.
Slow, steady, limited sessions (to keep them cool) is the key to longevity on hand pumps.

I have a Hill Mk3 handpump that still has all the original orings, and still pumps perfectly fine, and has gotta be around 8 or so years old now. Granted I've not used it much in the past few years, but it DID get used a lot in the first 4 or 5 years I had it. The last time I pumped up a gun with it was around 6 months ago and it was perfect.
The above recommended 50 or so pumps and then vent, as well as the slow and methodical pumping efforts all help to keep heat down.
In my opinion, the biggest factor in keeping mine running so long has been that when I was using it often, I would take it completely apart every 3-5 months and clean out the pump gunk. They get a gunky buildup that is a combo of silicone grease and moisture. Getting that moisture out on a semi-regular basis keeps things from rusting.
