I also have some pork shoulder in two crock pots. Those will be shredded for enchiladas verdes and bbq sandwiches.
Had today off, so I hit one of my favorite all you can eat lunch buffet: India PrinceLuckily, they were also serving my favorite, curry goat stew. Also had something I had never seen there before, coconut soup. It was sweet and it was really good! I went up 3 times and the 4th time for some dessert, rice pudding. I was contemplating a 4th dish, but I knew I would probably rue the over eating for the rest of the day. I left full and not stuffed....perfect!
Speaking of mystery meat, has any one else seen recent tv commercials for SPAM?

Got knocked down with the stomach flu on Thursday night in Columbia SC after driving 11 hours, and barely made it home from Florida on Friday after two weeks of beautiful weather and lots of fresh and salt water fishing. Managed to cobble together a pot of pressure cooker chicken-n-rice soup Saturday morning, and been sipping it for the past day and a half. The BRAT diet is helping, and feeling somewhat better today.
