I was recently gifted one of these scoped and I am finding conflicting information on whether they're airgun rated.

I'm also not sure how to mount it since the objective bell is quite large, my medium sized rings don't quite have enough clearance. By my calculations I need about .150" more height on the rings and I am not sure how to add that. If I get a set of High rings I suspect they'll be way higher than that and screw up my cheek weld. Can I add some material on the scope ring like some shims instead?

You could try that,  but there is no standard for ring heights, shimming scopes can be tricky and can potentially damage your scope if not done correctly. There is probably a medium ring out there that's a touch taller than yours. Measure yours and look around for something a bit taller.

What rings do you use and for what AG?

A 44mm objective is not that big.

Are there any sites which specify the ring height so I don't just have to order them and see?

Rick67, I have no idea. Probably some UTG or AccuShot medium profile rings that came with a few I have bought. I don't really remember any other brand names and just remember they're supposedly mediums.

A med 1” BKL is actually pretty high and should accommodate your 44mm objective.

Dovetail Centerpoint and UTG/Leapers mounts seem identical to Sportsmatch in height and not as high as their BKL counterparts.

Mine (the BKL), on a 2400KT Crosman, had a Hawke 4-12x50 AO and it was able to accommodate it, although the barrel on this AG is lower than the breech by approximately 3mm.
