The only advantage would be for others to be able to use it, and to accommodate shooters who don't from the same position as you. If you're not planning on others using it, just build it to suit your own needs. Since it will be portable, I'd probably tend to build it for my needs only. My permanent bench has cutouts on both sides, but it's sitting permanently on a rifle range.
I'm pretty sure there is some design's for portable bench's on our sight here?
I snagged a few pallets from the trash at work, I plan on making a large ambidextrous bench with them. I just need to get some treated 4x4 lumber to make the legs and then put the five pallet table top on top. will post pictures when I get it fineshed. if it turns out the way I have it in my head its going to be awesome and serve double duty as an outdoor table to entertain guests

I figured untreated would rot away if in contact with the ground
