People hunt porcupines? Who's gonna skin it? pretty easy to skin once you flip them over. you just have to be careful. i personally would not eat one unless in a survival situation. Ever smell one of those buggers up close?!? they smell like an outhouse! Easiest way to skin them out is to throw some dead leaves/ debris over them and burn the quills first, then skin them out.
